Located in the heart of the Porta Venezia district, Forno Collettivo comprises a bakery, a workshop, an organic wine bar, a kitchen and a cafeteria. An internationally renowned team of youngsters, including famous New York head baker Carol Choi, run the venue. Its owners are committed to producing fabulous bread using artisanal techniques imported from Northern Europe and other countries throughout the world. These include the exclusive use of sourdough, a focus on flour varieties obtained from Italian and other wheat, blends of old and new grains, and flour sourced exclusively from organic cultivations. Forno Colletivo also allows customers to bring and bake their own bread.
