Describing itself as “the Italian answer to fast food sandwich bars”, PanB recently opened its first flagship store in Corso Garibaldi in Brera. At this go-to address, customers can find gourmet sandwiches that are ultra-light because they are steamed rather than baked. The fillings, all created with PDO (Protected Denomination of Origin) or PGI (Protected Geographic Indication) ingredients like Prosciutto Gran Milano Riserva, Fior di latte and Provola cheese from Agerola and yellow Datterini tomatoes from Campania, are a perfect match for this unique steamed bread. The high point? The bread is steamed under a glass dome, while the customer waits, a method that is a treat to watch, and gives the bread the light coloured crust and a soft, light dough. The venue also serves a sweet version, the “Bollicino”, made from a butter and egg dough, that has a caramelized crust and a cream filling.
