The VIVA restaurant by starred chef Viviana Varese, opened on the second floor of Eataly Smeraldo, overlooking Piazza XXV Aprile. VIVA is the acronym of the chef’s name and surname, but also the leitmotif of her way of being and her cuisine, a tribute to substance, colour and life. Viviana firmly believes that food is a time for sharing and conviviality: the return to a natural relationship with the land, with a focus on only the highest quality ingredients and the recovery of ancient flavours, updated with a contemporary twist. A desire for excellence which is also apparent in the restaurant’s prestigious wine list featuring 700 labels. In addition to these, the restaurant offers ‘botanical cocktails’, created from a mixture of herbs, flowers, roots and plant extracts. A business lunch service is available from Monday to Friday.
