Just steps from Porta Venezia the young entrepreneur Hippolyte Vautrin, together with maitre Enrico Murru and chef Lucia Gaspari have inaugurated Røst, a new gourmet hub based on the concept of no-waste cuisine. Hosted inside a former garage, fully refurbished by Milanese architecture studio Vudafieri-Saverino Partners, at Røst Italian cuisine becomes the absolute protagonist. Based on the concept of circular cuisine featuring the use of all meat cuts – even the “poorest ones” – and vegetables, the menu changes according to the availability of the ingredients, selected by 16 small producers. Thanks to tight relationship with organic local producers who respect the Italian environment, Røst values zero-kilometre raw materials, be it seasonal vegetables or meat cuts such as diaphragm, brain, cow’s tongue and liver up to fish such as cod or mackerel. Particular attention is also given to wine, which can also be enjoyed at the counter from 7pm. Røst’s wine list boasts the entire production of 11 wine producers and over 170 labels of niche organic wines.
